Preheat oven to 160 C
Mix together - in a food processor
2 1/2 Cups Digestive biscuits
1/2 Cup granulated sugar
1/2 cup melted butter
Press almost all of the mixture evenly on bottom and sides of a spring form pan, reserving some crumbs for topping.
Using Mix master with whisk attachment.
Beat to form stiff but moist peaks
5 Egg whites
Gradually beat in
1/4 Cup granulated sugar
Mix until stiff and shiny
Cream until softened
500gm Cream cheese (2 x packs)
Beat in 1 at a time
5 egg yolks
Gradually beat in (in order listed)
2/3 Cup granulated sugar
3 tablespoons lemon juice
1/4 Cup cake and pastry flour
1 teaspoon pure vanilla essence
1 Cup Full fat sour cream
Fold in egg white mixture.
Pour in to lined springform pan.
Sprinkle reserved crumb mix on top
Bake in preheated oven at 160C for 1 1/4 hrs or until almost set.
Top with any fruit you desire or I prefer just some cooked down frozen berries with 2 tbsp of sugar added to a simple runny jam.
